The body is made from high-grade Japanese steel that has been nitride-treated at the foundry, giving the surface a dense, rust-resistant layer roughly twice as hard as stainless steel. There is no need for the traditional karayaki (burn-in) step â just a light oiling before first use. The uncoated natural wood handle is comfortable in the hand and can be replaced over time, making this a pan you keep rather than replace.
